A year ago, last November, I had heard all the hype on the Instant Pots, so I had my brother-in-law dial it into his mega deals registry. On Black Friday it came up on sale and I bought it. When I got it out of the box I immediately felt overwhelmed with all the damn buttons and such. I tried one recipe with roast and it was disgusting so I locked it away and gave up.

Fast forward two months later and my life partner decided to give it a whirl. He made a meat dish and it turned out amazing. Because I am competitive, of course I had to give it another shot. 😊 I looked on Pinterest and there were finally some cheat sheets on how to use it. Thank the lord some other crafty woman paved the way for me. I tried Zuppa Toscana (Olive Garden Soup). It turned out amazing and I used the sauté function in addition to the pressure cooking option and it wasn’t that hard.
I then tried hard boiled eggs… once you do this, the pot will have paid for itself in one use. The shells peel off the egg in three seconds. And it only takes 5 minutes to cook them.
Now I feel like a master at this Instant Pot thing. I have tried several recipes and I dare say about 95% of them are amazing. The Zuppa Soup recipe is a weekly staple in our house. Thought I would share the links to my favorite ones. Please send me ones that you have tried and loved. Happy Eating!
(One warning I read, on a Facebook Group I joined for Instant Pot users... do not go cheap when you buy it. It has to be a good brand and around $100 or severe burns and accidents can happen. This is because the cheaper ones don't release the pressure the way they need to so splurge or wait until you can splurge)
